For the Pasta Salad:
- 12 oz rotini pasta
- 1 cup diced ham
- 1 cup diced turkey (or chicken)
- 1 cup cubed cheddar cheese
- 4 hard-boiled eggs, chopped
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, sliced
- ½ cup red onion, thinly sliced
- 1 cup chopped romaine lettuce
- ½ cup croutons
For the Dressing:
- ¾ cup mayonnaise
- ¼ cup sour cream
- 2 tablespoons Dijon mustard
- 1 tablespoon red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
Instructions
- Cook rotini pasta according to package directions. Drain and rinse with cold water to cool completely.
- In a medium bowl, whisk together mayonnaise, sour cream, Dijon mustard, red wine vinegar, garlic powder, onion powder, salt, and pepper until smooth and creamy.
- In a large bowl, add cooled pasta, ham, turkey, cheddar cheese, eggs, tomatoes, cucumber, red onion, and romaine lettuce.
- Pour the dressing over the salad and toss gently until everything is evenly coated.
- Sprinkle in croutons just before serving for added crunch.
- Chill for at least 30 minutes before serving for best flavor.

- Add lettuce and croutons right before serving to keep them crisp
- For extra flavor, use thick-cut deli meat
