Description

This creamy chef salad pasta salad is loaded with rotini, ham, turkey, cheese, eggs, and fresh veggies tossed in a tangy, creamy dressing. It’s an easy, crowd-pleasing recipe perfect for potlucks, meal prep, and quick family dinners.

For the Pasta Salad:

  • 12 oz rotini pasta
  • 1 cup diced ham
  • 1 cup diced turkey (or chicken)
  • 1 cup cubed cheddar cheese
  • 4 hard-boiled eggs, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, sliced
  • ½ cup red onion, thinly sliced
  • 1 cup chopped romaine lettuce
  • ½ cup croutons

For the Dressing:

  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste


Instructions

  1. Cook rotini pasta according to package directions. Drain and rinse with cold water to cool completely.
  2. In a medium bowl, whisk together mayonnaise, sour cream, Dijon mustard, red wine vinegar, garlic powder, onion powder, salt, and pepper until smooth and creamy.
  3. In a large bowl, add cooled pasta, ham, turkey, cheddar cheese, eggs, tomatoes, cucumber, red onion, and romaine lettuce.
  4. Pour the dressing over the salad and toss gently until everything is evenly coated.
  5. Sprinkle in croutons just before serving for added crunch.
  6. Chill for at least 30 minutes before serving for best flavor.

Notes

  • Add lettuce and croutons right before serving to keep them crisp
  • For extra flavor, use thick-cut deli meat
  • If the salad dries out, stir in a little extra mayo or a splash of milk
