CHAI SUGAR
1 cup granulated sugar
1 teaspoon ground cardamon
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
1/2 vanilla bean split, and scrape the seeds out
COOKIES
1 1/2 cups unsalted softened butter
1 cup powdered sugar
1 tablespoon vanilla extract
3 cups all purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup chai sugar (made above)
Instructions
SUGAR
Mix all the ingredients together in a bowl and cover. Store in a dark cool place for a few days to let the flavors melt together. (Sugar will keep in airtight container for up to 6 months)
COOKIES
In a large bowl, beat the butter, powder sugar, and vanilla until creamy.
In another bowl whisk together flour, cinnamon, and salt. Gradually add flour mixture to butter mixture until all combined.
Scrape dough onto parchment paper and flatten into disk. Wrap up and place in fridge for an hour.
Preheat oven to 350
Take dough out and roll dough until it’s about 1/4 inch thick
Use cookie cutter to cut out shape of cookie and place cookies 2 inches apart on baking sheets.
Sprinkle with Chai sugar
Bake cookies until edges are lightly browned. About 10 minutes. Let cookies cool on wire racks, and store for up to a week in airtight container.
