Make Carrabba’s famous Chicken Bryan at home with tender chicken, creamy goat cheese, sun-dried tomatoes, basil, and a rich lemon butter sauce. This easy restaurant copycat chicken dinner is ready in about 30 minutes and perfect for weeknights or date night.

  • 4 boneless, skinless chicken breasts, about 1 ½ pounds
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon kosher salt, divided
  • ½ teaspoon black pepper, divided
  • 1 tablespoon olive oil
  • 6 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • ⅓ cup dry white wine or chicken broth
  • 3 tablespoons fresh lemon juice
  • ⅓ cup oil-packed sun-dried tomatoes, drained and chopped
  • ¼ cup thinly sliced fresh basil, plus more for serving
  • 4 ounces goat cheese, crumbled
  • Lemon slices, optional, for serving

Instructions

  • Pat the chicken breasts dry with paper towels. Season both sides with Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper.

  • Heat olive oil in a large skillet or grill pan over medium-high heat. Add the chicken and cook for 4 to 6 minutes per side, until golden brown and cooked through. The internal temperature should reach 165°F. Transfer chicken to a plate and loosely tent with foil.

  • Reduce the heat to medium. Add 2 tablespoons butter and garlic to the skillet. Cook for 30 seconds, just until fragrant.

  • Pour in the white wine or chicken broth, scraping up the browned bits from the bottom of the skillet. Simmer for 2 to 3 minutes, until slightly reduced.

  • Stir in the remaining 4 tablespoons butter, lemon juice, sun-dried tomatoes, basil, remaining ¼ teaspoon salt, and remaining ¼ teaspoon black pepper. Stir just until the butter melts and the sauce is glossy.

  • Return the chicken to the skillet. Divide the goat cheese over the chicken breasts, then spoon the warm lemon butter sauce and tomatoes over the top.

  • Let sit for 1 to 2 minutes, until the goat cheese begins to soften. Garnish with extra basil and lemon slices, if desired.

Notes

  • For evenly cooked chicken, pound thick chicken breasts to an even thickness before seasoning.
  • Use chicken broth instead of white wine for an alcohol-free version.
  • Do not let the sauce boil after adding the final butter or it may separate.
  • Serve with creamy lemon noodles, angel hair pasta, rice, mashed potatoes, or roasted asparagus.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a covered skillet over low heat with a splash of chicken broth.
