This Cajun Cottage Cheese Alfredo is a creamy, high-protein twist on classic Alfredo sauce. Blended cottage cheese creates a silky smooth sauce that’s tossed with pasta, Cajun seasoning, shrimp, and chicken for a bold and flavorful dinner ready in about 20 minutes.

Ingredients

12 ounces pasta (fettuccine or linguine)

1 pound shrimp, peeled and deveined

1 pound chicken breast, diced

2 teaspoons Cajun seasoning

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic, minced

1 cup cottage cheese

½ cup milk

½ cup grated Parmesan cheese

½ teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

¼ teaspoon red pepper flakes (optional)

½ cup reserved pasta water

Fresh parsley, chopped (for garnish)

Instructions

  • Cook the pasta according to package instructions in salted water. Reserve about ½ cup of pasta water before draining.

  • While the pasta cooks, blend the Alfredo base. Add cottage cheese, milk, and Parmesan cheese to a blender and blend until smooth and creamy.

  • Season the shrimp and diced chicken with Cajun seasoning.

  • Heat olive oil in a large stainless skillet over medium heat. Add chicken and cook until browned and cooked through. Remove and set aside.

  • In the same skillet cook the shrimp for about 2 minutes per side until pink. Remove and set aside.

  • Melt butter in the skillet and sauté garlic for about 30 seconds until fragrant.

  • Pour the blended cottage cheese sauce into the skillet. Stir in smoked paprika, black pepper, salt, and red pepper flakes.

  • Add a splash of reserved pasta water to thin the sauce if needed.

  • Add the cooked pasta, shrimp, and chicken back into the skillet. Toss everything together until coated in the creamy Cajun Alfredo sauce.

  • Garnish with chopped parsley and extra Parmesan cheese before serving.

Notes

Blending the cottage cheese completely smooth is the key to making the sauce creamy instead of grainy.

Use full-fat cottage cheese for the richest flavor.

Add extra Cajun seasoning or red pepper flakes if you prefer a spicier pasta.
