This easy Cabbage Roll in a Bowl recipe has all the cozy flavor of stuffed cabbage rolls in one simple skillet meal. Made with ground beef, tender cabbage, rice, and a rich tomato sauce, it is a hearty, budget-friendly dinner for busy weeknights.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 small head green cabbage, chopped into bite-sized pieces, about 8 cups
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 (15-ounce) can tomato sauce
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Fresh parsley, chopped, for serving

Instructions

  1. Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat. Add the ground beef and onion. Cook, breaking the beef into crumbles, until browned and the onion is softened. Drain excess grease if needed.
  2. Add the garlic and cook for 30 seconds, just until fragrant.
  3. Add the chopped cabbage and cook for 4 to 5 minutes, stirring often, until it starts to soften.
  4. Stir in the uncooked rice, beef broth, tomato sauce, diced tomatoes with their juices, tomato paste, Worcestershire sauce, brown sugar, Italian seasoning, smoked paprika, salt, and pepper.
  5. Bring the mixture to a gentle boil. Reduce the heat to low, cover, and simmer for 18 to 22 minutes, until the rice is tender and most of the liquid is absorbed.
  6. Remove from the heat and let rest, covered, for 5 minutes. Fluff with a fork, taste for seasoning, and garnish with fresh parsley before serving.

Notes

  • If the rice is not tender but the skillet looks dry, add a splash of beef broth or water, cover, and cook for a few more minutes.
  • For a low-carb version, leave out the rice and stir in cauliflower rice during the last 5 minutes of cooking.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
