Instructions
-
Bake the Waffle Fries
Preheat oven according to package directions. Spread waffle fries in a single layer and bake until golden brown and extra crispy. Lightly salt and set aside. -
Cook the Sausage
In a skillet over medium heat, cook breakfast sausage, breaking it apart until browned and fully cooked. Drain excess grease if necessary. -
Cook the Bacon
Cook bacon until crispy and crumble into small pieces. -
Make the Black Pepper Gravy
In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1–2 minutes. Slowly whisk in milk, stirring constantly until thickened (about 4–5 minutes). Season with salt and freshly cracked black pepper. Taste and adjust. -
Fry the Eggs
Heat butter or oil in a nonstick skillet. Crack in eggs and cook sunny side up or over easy until whites are set and yolks remain runny. Season with salt and pepper. -
Assemble
Spread hot waffle fries on a serving platter. Top with crumbled sausage and bacon bits. Spoon generous amounts of black pepper gravy over the top. Finish with fried eggs. Garnish as desired and serve immediately.
Notes
-
Bake waffle fries slightly longer for maximum crispiness.
-
Fresh cracked black pepper makes a big difference in flavor.
-
For extra richness, stir a spoonful of sausage drippings into the gravy.
-
Best served immediately for optimal texture.
