For the Meat Topping:

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 2 cups whole milk

  • 4 large eggs

Instructions

  1. Bake the Waffle Fries
    Preheat oven according to package directions. Spread waffle fries in a single layer and bake until golden brown and extra crispy. Lightly salt and set aside.

  2. Cook the Sausage
    In a skillet over medium heat, cook breakfast sausage, breaking it apart until browned and fully cooked. Drain excess grease if necessary.

  3. Cook the Bacon
    Cook bacon until crispy and crumble into small pieces.

  4. Make the Black Pepper Gravy
    In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1–2 minutes. Slowly whisk in milk, stirring constantly until thickened (about 4–5 minutes). Season with salt and freshly cracked black pepper. Taste and adjust.

  5. Fry the Eggs
    Heat butter or oil in a nonstick skillet. Crack in eggs and cook sunny side up or over easy until whites are set and yolks remain runny. Season with salt and pepper.

  6. Assemble
