  • ½ cup crumbled blue cheese

  • 2 tablespoons butter, softened and divided

  • ¾ teaspoon dried thyme

  • Salt and black pepper, to taste

  • 4 bone-in, skin-on chicken breasts

  • 1 tablespoon lemon juice

  • ⅓ cup buffalo wing sauce

Instructions

  • Preheat the oven to 400°F.

  • In a small bowl, combine blue cheese, 1 tablespoon butter, and dried thyme. Mix well and season lightly with salt and pepper.

  • Gently loosen the skin from each chicken breast, being careful not to tear it. Spread the blue cheese butter mixture evenly under the skin.

  • Place the chicken breasts in a shallow roasting pan.

  • Melt the remaining 1 tablespoon butter and stir in lemon juice. Brush over the chicken and season with salt and pepper.

  • Roast for 50 minutes, or until chicken reaches an internal temperature of 165°F.

  • Remove the pan from the oven and switch to broil.

  • Spoon buffalo wing sauce generously over each chicken breast.

  • Broil for 3 minutes, until the sauce bubbles and lightly caramelizes.

  • Remove from oven and let rest for 5 minutes before serving.
