These crispy Big Mac tacos are made with smash-style ground beef cooked directly onto tortillas, then topped with melty cheese, pickles, chopped onions, shredded lettuce, and drippy special sauce. An easy, viral taco recipe perfect for busy weeknights.

1 pound ground beef (80/20)

8 small flour tortillas

1 teaspoon kosher salt

½ teaspoon black pepper

8 slices American cheese

¾ cup shredded iceberg lettuce

½ cup dill pickle chips

¼ cup finely chopped white onion

1 tablespoon neutral oil (for skillet)
Special Sauce

¾ cup mayonnaise
-
3 tablespoons ketchup
-
2 tablespoons yellow mustard

2 tablespoons sweet pickle relish

1 teaspoon white vinegar
-
½ teaspoon paprika
-
½ teaspoon garlic powder
-
½ teaspoon onion powder
Instructions

Make the Special Sauce
In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, garlic powder, and onion powder. Refrigerate until ready to use. -
Prepare the Tacos
Divide ground beef into 8 equal portions. Press a thin, even layer of beef onto one side of each tortilla. Season with salt and pepper. -
Cook the Beef
Heat oil in a large skillet over medium-high heat. Place tortillas beef-side down into the skillet. Cook 3–4 minutes until the beef is deeply browned and crispy. -
Flip & Add Cheese
Flip the tacos, add a slice of American cheese to the beef, and cook 1–2 minutes until the tortilla is lightly golden and the cheese is melted. -
Assemble
Remove from skillet. Top with shredded lettuce, pickles, chopped onion, and a generous drizzle of special sauce. -
Serve
Fold and serve immediately while hot and crispy.
