Description

These crispy Big Mac tacos are made with smash-style ground beef cooked directly onto tortillas, then topped with melty cheese, pickles, chopped onions, shredded lettuce, and drippy special sauce. An easy, viral taco recipe perfect for busy weeknights.


Ingredients

  • 1 pound ground beef (80/20)

  • 8 small flour tortillas

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 8 slices American cheese

  • ¾ cup shredded iceberg lettuce

  • ½ cup dill pickle chips

  • ¼ cup finely chopped white onion

  • 1 tablespoon neutral oil (for skillet)

Special Sauce

  • ¾ cup mayonnaise

  • 3 tablespoons ketchup

  • 2 tablespoons yellow mustard

  • 2 tablespoons sweet pickle relish

  • 1 teaspoon white vinegar

  • ½ teaspoon paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder


Instructions

  • Make the Special Sauce
    In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, garlic powder, and onion powder. Refrigerate until ready to use.

  • Prepare the Tacos
    Divide ground beef into 8 equal portions. Press a thin, even layer of beef onto one side of each tortilla. Season with salt and pepper.

  • Cook the Beef
    Heat oil in a large skillet over medium-high heat. Place tortillas beef-side down into the skillet. Cook 3–4 minutes until the beef is deeply browned and crispy.

  • Flip & Add Cheese
    Flip the tacos, add a slice of American cheese to the beef, and cook 1–2 minutes until the tortilla is lightly golden and the cheese is melted.

  • Assemble
    Remove from skillet. Top with shredded lettuce, pickles, chopped onion, and a generous drizzle of special sauce.

  • Serve
    Fold and serve immediately while hot and crispy.

Notes

  • Don’t overload the tacos before folding to keep them crispy

  • American cheese melts best for authentic Big Mac flavor
