Ingredients

  • 4 medium russet potatoes, diced into ½-inch cubes

  • 1 small onion, diced

  • 2 tablespoons butter

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • ½ teaspoon onion powder

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Bring a pot of salted water to a boil. Add diced potatoes and cook for 5–6 minutes until slightly tender. Drain and let steam dry.

  2. Heat butter and olive oil in a large skillet over medium-high heat.

  3. Add potatoes in a single layer. Cook undisturbed for 4–5 minutes until a golden crust forms.

  4. Flip and continue cooking, stirring occasionally, until crispy on all sides.

  5. Add diced onion and cook until softened and slightly caramelized.

  6. Sprinkle in garlic powder, paprika, onion powder, salt, and pepper. Toss to coat evenly.

  7. Cook another 2–3 minutes, garnish with parsley, and serve hot.

Notes

  • Parboiling is the key to crispy outsides and fluffy centers

  • Don’t overcrowd the pan—cook in batches if needed

  • Use cast iron for best browning

  • Let potatoes sit before flipping to build crust
