This copycat Cracker Barrel meatloaf is tender, juicy, and packed with flavor. Made with buttery crackers, cheddar cheese, and topped with a sweet tangy glaze, this easy comfort food dinner is perfect for weeknights or family meals.

Meatloaf:

  • 2 lbs ground beef (80/20)
  • 1 cup crushed buttery crackers (like Ritz)
  • 1 small onion, finely chopped
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon yellow mustard


Instructions

  1. Preheat oven to 350°F and lightly grease a loaf pan or line a baking sheet.
  2. Mix the meatloaf:
    In a large bowl, combine ground beef, crushed crackers, onion, milk, eggs, cheddar cheese, salt, and pepper. Mix gently until just combined.
  3. Shape the loaf:
    Form into a loaf shape and place into the prepared pan or on a baking sheet.
  4. Make the glaze:
    In a small bowl, mix ketchup, brown sugar, and mustard until smooth.
  5. Bake:
    Spread half the glaze over the meatloaf and bake for 30 minutes.
  6. Finish baking:
    Remove from oven, spread remaining glaze on top, and return to bake for another 30–40 minutes, or until internal temperature reaches 160°F.
  7. Rest and serve:
    Let rest for 10 minutes before slicing and serving.

  • Use 80/20 ground beef for the best flavor and moisture.
  • Do not overmix the meat mixture or it can become dense.
  • Letting the meatloaf rest before slicing helps it hold together.
