This Coconut Lime Rice is fluffy, creamy, and bursting with fresh lime flavor. Made with jasmine rice, coconut milk, and fresh cilantro, it’s the perfect tropical side dish for grilled chicken, seafood, tacos, and more.

- 1 cup jasmine rice
- 1 cup full-fat coconut milk
- 1 cup chicken broth
- 1 tablespoon butter
- 1 teaspoon kosher salt
- Zest of 1 lime
- Juice of 2 limes
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon honey (optional)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- Add the rice, coconut milk, chicken broth, butter, and salt to a medium saucepan.
- Bring to a gentle boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 15-18 minutes, or until the liquid is absorbed.
- Remove from heat and let stand, covered, for 10 minutes.
- Fluff with a fork and stir in the lime zest, lime juice, cilantro, and honey if using.
- Taste and adjust seasoning as needed.
- Serve warm.
