This creamy homemade Caesar dressing is rich, garlicky, and packed with classic flavor from anchovies, fresh lemon juice, and Parmesan cheese. It comes together in minutes and is perfect for Caesar salads, wraps, sandwiches, and roasted vegetables.
Ingredients

2 cloves garlic, finely minced

3 anchovy fillets (or 1 teaspoon anchovy paste)

1 large egg yolk

2 teaspoons Dijon mustard

2 tablespoons fresh lemon juice

1 teaspoon Worcestershire sauce

½ cup olive oil

¼ cup freshly grated Parmesan cheese

Instructions

Finely mince the garlic and anchovy fillets together until they form a paste.

In a bowl, whisk together the egg yolk, Dijon mustard, lemon juice, and Worcestershire sauce.

Add the garlic and anchovy mixture and whisk until smooth.

Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing and make it thick and creamy.

Stir in the grated Parmesan cheese and black pepper.

Taste and add salt if needed.
