- 6 large eggs
- 1 cup milk
- 1 cup cottage cheese
- 1 ½ cups shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 2 cups frozen hash browns, thawed
- 3 green onions, sliced
- ½ teaspoon salt
- ½ teaspoon black pepper
Topping:
- 1 cup cornflakes, lightly crushed
- 1 tablespoon melted butter
Instructions
- Preheat oven to 375°F.
- Place pie crust into a 9-inch pie dish and set aside.
- Spread thawed hash browns evenly into the bottom of the crust.
- Sprinkle bacon, green onions, and shredded cheese over the hash browns.
- In a large bowl, whisk together eggs, milk, cottage cheese, salt, and pepper.
- Pour the egg mixture evenly over the layered ingredients.
- In a small bowl, mix crushed cornflakes with melted butter.
- Sprinkle the cornflake topping evenly over the pie.
- Bake for 40–45 minutes, or until the center is set and the top is golden.
- Let rest for 10 minutes before slicing and serving.
