Description

This easy Bahama Breeze copycat Cuban bread is topped with zesty citrus-marinated tomatoes, melted cheese, and fresh basil. A simple grilled appetizer perfect for summer entertaining.


Ingredients

Tomato Marinade

  • ¼ cup fresh orange juice

  • 3 tablespoons white wine vinegar

  • 1 tablespoon fresh lemon juice

  • ¼ cup olive oil

  • 1 tablespoon Dijon mustard

  • 1 garlic clove, minced

  • 1 teaspoon fresh oregano, chopped

  • 1 teaspoon fresh parsley, chopped

  • 1 teaspoon fresh basil, chopped

  • 1 tablespoon raw sugar

  • Salt and black pepper, to taste

Cuban Bread

  • 1 loaf Cuban bread

  • Olive oil, for brushing

  • Garlic salt, to taste

  • 3 tablespoons butter, softened

  • ½ cup shredded Parmesan cheese

  • Fresh basil, for garnish


Instructions

  • In a bowl, whisk together orange juice, white wine vinegar, lemon juice, olive oil, Dijon mustard, garlic, herbs, sugar, salt, and pepper.

  • Add sliced tomatoes to the marinade, toss to coat, cover, and refrigerate for at least 2 hours.

  • Preheat grill to medium heat.

  • Cut Cuban bread into thirds, then slice each piece in half lengthwise. Brush cut sides with olive oil and sprinkle with garlic salt.

  • Place bread cut-side down on the grill and grill until lightly toasted.

  • Flip bread over, spread with softened butter, and spoon a small amount of tomato marinade over each piece.

  • Top with marinated tomatoes and sprinkle with Parmesan cheese.

  • Close the grill lid and cook 2–3 minutes, until cheese is melted and bread is warmed through.

  • Remove from grill, garnish with fresh basil, slice into pieces, and serve warm.

Notes

  • Marinating the tomatoes overnight gives the best flavor.

  • Serve warm or at room temperature for parties.

  • This recipe can also be broiled in the oven if grilling isn’t an option.
