Description
This easy Bahama Breeze copycat Cuban bread is topped with zesty citrus-marinated tomatoes, melted cheese, and fresh basil. A simple grilled appetizer perfect for summer entertaining.
Ingredients
Tomato Marinade

¼ cup fresh orange juice

3 tablespoons white wine vinegar

1 tablespoon fresh lemon juice

¼ cup olive oil

1 tablespoon Dijon mustard

1 garlic clove, minced

1 teaspoon fresh oregano, chopped

1 teaspoon fresh parsley, chopped
-
1 teaspoon fresh basil, chopped

1 tablespoon raw sugar

Salt and black pepper, to taste
Cuban Bread

1 loaf Cuban bread
-
Olive oil, for brushing
-
Garlic salt, to taste

3 tablespoons butter, softened
-
½ cup shredded Parmesan cheese

Fresh basil, for garnish
Instructions

In a bowl, whisk together orange juice, white wine vinegar, lemon juice, olive oil, Dijon mustard, garlic, herbs, sugar, salt, and pepper.

Add sliced tomatoes to the marinade, toss to coat, cover, and refrigerate for at least 2 hours.

Preheat grill to medium heat.

Cut Cuban bread into thirds, then slice each piece in half lengthwise. Brush cut sides with olive oil and sprinkle with garlic salt.

Place bread cut-side down on the grill and grill until lightly toasted.

Flip bread over, spread with softened butter, and spoon a small amount of tomato marinade over each piece.

Top with marinated tomatoes and sprinkle with Parmesan cheese.

Close the grill lid and cook 2–3 minutes, until cheese is melted and bread is warmed through.

Remove from grill, garnish with fresh basil, slice into pieces, and serve warm.
Notes

Marinating the tomatoes overnight gives the best flavor.

Serve warm or at room temperature for parties.

This recipe can also be broiled in the oven if grilling isn’t an option.
