Description

Sweet, sticky, crispy bacon inspired by Snoop Dogg’s famous Billion Dollar Bacon, but with a bold twist. This version swaps red pepper flakes for rich Asian garlic chili oil, creating a caramelized maple-brown sugar glaze with deep garlicky heat. Perfect for brunch boards, burgers, breakfast sandwiches, or holiday breakfasts.

Ingredients

Scale

1 lb thick-cut bacon
1/4 cup brown sugar
2 tbsp maple syrup
1–2 tbsp Asian garlic chili oil
1 tsp cracked black pepper
1/2 tsp smoked paprika

Optional garnish
2 tbsp sliced scallions
1 tsp sesame seeds

Instructions

Step 1: Preheat Oven

Preheat oven to 375°F. Line a baking sheet with parchment paper or foil. Place a wire rack on top if you want extra crispy bacon.

Step 2: Arrange the Bacon

Lay the bacon strips flat in a single layer on the rack or parchment-lined sheet.

Step 3: Make the Glaze

In a bowl mix together:
brown sugar, maple syrup, chili oil, black pepper, and smoked paprika until it forms a thick glaze.

Step 4: Coat the Bacon

Using a spoon or brush, coat each strip of bacon generously with the glaze.

Step 5: Bake

Bake for 18–25 minutes, depending on bacon thickness, until the bacon is caramelized, glossy, and crispy around the edges.

Step 6: Garnish

Transfer bacon to parchment and sprinkle with sliced scallions and sesame seeds if desired. Serve warm.

Notes

Use thick-cut bacon for best texture.
Watch closely during the last few minutes since the sugar glaze can caramelize quickly.
Add extra chili oil if you want more heat.
