Description

A fresh and vibrant salad made with peppery arugula, sweet roasted beets, creamy avocado, goat cheese, and candied walnuts tossed in a bright honey lemon vinaigrette.


Ingredients

Salad

  • 4 cups arugula

  • 2 roasted beets, sliced

  • 1 avocado, diced

  • 3 oz goat cheese, crumbled

  • ½ cup candied walnuts

Dressing

  • 3 tbsp olive oil

  • 2 tbsp lemon juice

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • 1 garlic clove, minced

  • salt and pepper


Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and pepper.

  2. Place arugula in a large bowl.

  3. Add roasted beet slices, avocado, goat cheese, and candied walnuts.

  4. Drizzle dressing over the salad just before serving.

  5. Toss gently and serve immediately.
