Ingredients
Salad

4 cups arugula

2 roasted beets, sliced

1 avocado, diced

3 oz goat cheese, crumbled

½ cup candied walnuts
Dressing

3 tbsp olive oil

2 tbsp lemon juice
-
1 tbsp honey

1 tsp Dijon mustard

1 garlic clove, minced

salt and pepper
Instructions

In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and pepper.

Place arugula in a large bowl.

Add roasted beet slices, avocado, goat cheese, and candied walnuts.

Drizzle dressing over the salad just before serving.
