When the weather outside is frightful, there’s nothing better than a satisfying bowl of creamy, cheesy broccoli soup!
I’ve been waiting for a cold front to come through for weeks, so I could make this but couldn’t wait anymore. 80 degrees and hot soup… #Floridaproblems
You get used to it living here, but just one season I’d love some consistent cold weather to hang around.
But back to the soup…
Sharp white cheddar is what I use in mine because it adds so much flavor without over powering the broccoli. I really think it balances the flavors out nicely, and gives it such a nice and creamy consistency too. 🙂
I personally like to leave mine a little chunky for texture, but if you like your soup super smooth you can blend it for longer. It will be delicious either way!

It’s perfect serving this up with some crusty bread to dip in or even better, a bread bowl…but I didn’t have time to run to the bakery this day for that so a crunchy french baguette had to do, and there’s nothing wrong with that 😉
Here’s how to make it…

- Total Time: 255 minutes
- Yield: 4 people 1x
Ingredients
- 5 tablespoons butter
- 5 tablespoons flour
- 3 cups milk
- 3 cups chicken broth
- 1 yellow onion (diced)
- 3–4 cups chopped broccoli florets
- 1 tablespoon minced garlic
- 1 teaspoon each thyme and red pepper flakes
- 2 ounces cream cheese
- 2 cups shredded sharp white cheddar cheese (diced)
- salt and pepper to taste
Instructions
- In a large sauce pan, melt butter over medium heat. Stir in the flour when butter has melted until mixture clumps up. Whisk in the milk slowly until a thick white sauce forms.
- Add chopped onions, cheese, broccoli, garlic, seasonings, and cream cheese to your slow cooker. Add the sauce from the pan, and the chicken broth. Stir to combine. Cover and cook on low for 4 hours.
- Uncover and blend with hand blender until desired consistency. Add salt and pepper if needed
- Enjoy!
