1 lb. pasta (something hearty like rotini or rigatoni)
1 box frozen spinach (thaw and drain all of the moisture out of it)
1 16 oz. can artichoke hearts
4 oz cream cheese
1/2 cup grated parmesan
3 cloves garlic, minced
1 teaspoon crushed red pepper flakes
salt and pepper to taste
2 tablespoons butter
GRILLED CHICKEN
2 boneless skinless chicken breasts
2 tablespoons blackening seasoning
olive oil
Instructions
Cook pasta according to package directions. Reserve 1 cup of pasta water before draining, and set aside.
Season both sides of chicken breasts and grill until done. Let rest before slicing.
In a saute pan, melt butter and add in your garlic, spinach and artichoke hearts. Cook for 5 minutes.
Add in your cream cheese and reserved pasta water. Stir everything together until cream cheese is melted. Season with salt pepper and red pepper flakes.
Add in your pasta, and parmesan cheese. toss everything together until pasta is coated in sauce. If you need to thin it out, add a splash of milk or cream.
