Ingredients:
rice stick noodles (optional)
1 head iceberg lettuce
1 lb. jumbo shrimp
1/4 cup mayo
1/3 cup sour cream
2 tablespoons of lime juice
Siracha (1+ tablespoons depending on how hot you’d like it)
1 cup shredded red cabbage
1/2 cup green onions
1/4 cup shredded carrots
salt and pepper
1. Begin by dropping your shrimp in a pot of boiling salted water. While your shrimp cook, shred and chop your cabbage, carrots, and green onions and put them into a big bowl.
2. Once the shrimp is cooked, pull them from the water and set aside to cool for a bit. Then drop your rice noodles into the boiling water. Cook noodles according to package, and pull from water, set aside to cool.
3. When shrimp is cool to touch, take off any shell/legs etc. and coarsely chop, then add to bowl.
4. Add your mayo, siracha (asian hot pepper sauce), sour cream, lime juice, and salt and pepper to bowl.
5.Give everything a good mix, place a spoonful on top of lettuce leaf, top with rice noodles, fold like a taco, and enjoy!
