So back to the grind of simply clean eating, and dusting my running shoes off, because momma needs to get back on the wagon…
I figured I’d start sharing some of my healthy recipes with you in case you’re looking to drop a few pounds too. I was able to lose 50 lbs. last year eating this way and for the most part was able to keep it off.
I don’t diet. I just changed my lifestyle, but fell back into old habits this year and gained some back. No biggie. I at least recognize my bad behavior now and know exactly what I need to do to get back on track.
And don’t worry, I’m human. So there will still be plenty of pasta and delicious soup recipes to go around. Just in moderation. 😉
Like I said, I don’t diet. I’m totally realistic and know that I can eat that bowl of pasta…
…I’m just going to need to run a little harder that day and behave for the next few days to balance everything out.
That was the key for me when I started my weight loss journey last year. I needed to know that I wouldn’t be depriving myself of anything I loved.
(And man oh man, do I love me some carbs.) 😉
But this lemon salmon with asparagus dish comes in a close second…It’s light yet filling and always makes me feel good when I eat it!
Here’s how to make it…
PrintSheet Pan Lemon Salmon with Asparagus
- Prep Time: 5 minutes
- Cook Time: 12 minutes
- Total Time: 17 minutes
- Yield: 3 people 1x
Ingredients
- 3 4 oz pieces wild Alaskan salmon
- 1 bunch fresh asparagus
- 2 lemons (sliced)
- 1 8 oz. container plain Greek yogurt
- 2 garlic cloves (minced)
- 2 tablespoons fresh dill (chopped)
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions
- Preheat over to 450 and lightly oil sheet pan.
- Cut off bottoms of asparagus and lay on the sheet pan. Roll them in the oil to coat.
- Lay salmon directly on asparagus and squeeze with fresh lemon juice. Season with salt and pepper and lay 3 sliced lemons on each fillet. Bake in over for 12-15 minutes.
- Mince garlic and fresh dill and add into the yogurt. Mix well.
- Remove salmon from over, put a heaping spoonful of garlic yogurt onto each fillet and serve immediately.

I love this salmon recipe. It’s so clean and you can really taste all the fresh ingredients. It’s a great meal to kick off my healthy eating and hopefully yours too!
