Hey friends! Today, I’m sharing a super simple crock pot recipe that I know will become and instant family favorite in your house! Sausage and peppers is one of those meals that is so versatile! Make it one day to serve in rolls, then save it and turn it into a base for a great pasta dish, or eat it on its own… It seriously gets better the next day! I make sausage and peppers a few times a month. It’s simple, doesn’t require a ton of ingredients yet is full of rich flavor and sometimes heat depending on how hot you like your sausage…
Here’s what you’ll need…
- 1 pound hot Italian pork sausage (I buy the 4 packs from Costco…They are SO GOOD! But feel free to substitute with turkey sausage, or sweet Italian sausage if spice isn’t your thing!)
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 2 yellow onions, sliced
- splash of balsamic vinegar
- 1/2 teaspoon dried oregano
- 1 cup roughly chopped fresh basil leaves
- 4-6 good sized garlic cloves, chopped
- 2 tablespoons tomato paste
- 1 (15-ounce) can diced tomatoes
- Jar of your favorite tomato sauce, I use my crockpot marinara for this
- salt and pepper
- 1/4 teaspoon red pepper flakes, optional
- **freshly chopped parsely and/or parmesan to top
By the way…you don’t need a crock pot for this either. If you prefer to make this on the stove it’s a one pot meal!
Here’s how you make it…
CROCKPOT VERSION-
- In a sauté pan brown your sausages on all sides, don’t worry about cooking them through, just get a nice color on them
- Once browned add a splash of balsamic vinegar to the pan and use a wooden spoon to scrape up the bits
- Poor the sausages and and drippings into your crockpot
- Add the rest of the ingredients to your crockpot, Set it for medium-high for 6-8 hours
STOVETOP VERSION-
- In a dutch oven or similar sized pot brown your sausages on all sides, don’t worry about cooking them through, just get a nice color on them
- Once browned add a splash of balsamic vinegar to the pan and use a wooden spoon to scrape up the bits
- Add your onions, peppers, and garlic to the pot, cook until everything begins to soften
- Add the rest of the ingredients, stir together and let it lightly simmer on the stove on medium low for 1-2 hours
I don’t even need bread or pasta to go with it. Just hand me a spoon, grate some parmesan on top and watch me dive in!

Sorry for all the questions. Do you brown the sausages and then slice them up? I sliced them first and it was a little harder to cut them. Will be eating this for dinner tonight 🙂

cook then slice, sausages are hard to slice well when they’re raw 🙂
