I can walk outside without instantly melting from the humidity and that means fall is just around the corner! Seriously, my most favorite time of year…
I’m generally just a happier person when cooler temps arrive, I get to whip out my chilly weather wardrobe and my fluffy socks make a return to my feet, and my internal cravings begin to go toward rich and hearty meals, and warm flavors. Pumpkin spice anything is fair game, but unfortunately I still haven’t unlocked my baking gene.
So what’s a girl to do?
Fake it, of course. 😉
And that’s why this super easy pumpkin spice cake is perfection! Five ingredients. Three minutes in the microwave. The result?
A perfectly portioned fluffy and light, sweet pumpkin spiced treat!
If you eat it…cool weather will come. (That’s what I keep telling myself, at least) 🙂
So until I figure out how to master the art of baking, I’ll stick to my simple little microwave pumpkin spice cake. It’s easy, inexpensive and satisfies the craving for something a little sweet when I feel like it this time of year. 🙂

Description
5 ingredients +3 minutes in the microwave and you will have a spongy, light and fluffy pumpkin spice cake that’s perfect for any cool weather day.
Ingredients
- 1/4 cup Angel Food Cake Mix
- 2 teaspoons Canned Pumpkin
- 1 teaspoon Chopped Pecans
- 1/4 teaspoon Pumpkin Pie Spice
- 3 tablespoons water
- **whipped cream (for topping)
Instructions
- Mix all ingredients into a ceramic and microwavable cup until combined.
- Pop into the microwave for 2-3 minutes on high. Depending on how strong the microwave is, you’ll know when it’s done when it doesn’t collapse and holds its shape.
- **Top with whipped cream and a sprinkle of more pumpkin spice seasoning and enjoy!
