I know, I know…I’m surprised too. While my baking skills are still developing I can say that this recipe is practically fool proof, so even the inexperienced baker like myself can look like a pro. 🙂
My daughter loves banana’s and sometimes I buy too many and a few start to brown before she gets a chance to eat them, but it works out because that’s when I whip up a big batch of these maple banana muffins. They’re so moist and perfect to stick in her lunchbox or eat on the way to the bus stop in the morning.
This banana muffin recipe makes 12 regular sized muffins, but I doubled the recipe this day and made more. I also added some chopped walnuts to top half of them just to mix things up, but you don’t have to do that if you don’t want to. These are so great with a little butter when they come out of the oven and are still warm. That’s my favorite time to eat them but they stay moist and delicious for a lot longer as long as you keep them in a sealed container.

Description
Perfectly moist and delicious! These maple banana muffins will be your new go to recipe!
Ingredients
- 1 3/4 cup all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup sugar
- 1/4 cup melted butter
- 1 egg (beaten)
- 1 teaspoon real vanilla extract
- 2 bananas (mashed) (*overly ripened are best)
- 1/4 cup maple syrup
- 4 tablespoons milk
Instructions
- In a large mixing bowl mash up bananas and add in all the wet ingredients and mix
- Add dry ingredients into a sifter and sift into the wet ingredients and mix until combined
- Preheat over to 375, Spray muffin tin with non stick baking spray and fill the cups with muffin batter.
- Bake for 20 minutes, or until a tooth pick is inserted into middle of muffin and comes out clean.
