Healthy Breakfast Idea: Savory Oats

  • 1 package instant oatmeal (plain)
  • 1 tablespoon fresh herbs (chopped- your choice- I used chives, tarragon, and basil)
  • 1 tablespoon scallions (chopped)
  • 1 tablespoon cheddar cheese (I’m using low fat)
  • 1 teaspoon butter
  • 1 cup fresh spinach
  • salt and pepper (to taste)


  1. Cook your oatmeal according to package directions.
  2. Add in a pat of butter, sprinkle of cheese, whatever fresh herbs you have on hand and enjoy, and some salt and pepper. Give everything a good stir and set aside.
  3. Fry your egg to desired doneness
  4. Lay some spinach in a bowl, pour your savory oats on top and lay your egg smack dab in the middle of that creamy, cheesy, herby pool of goodness…
  5. and done. 🙂
