1 tablespoon fresh herbs (chopped- your choice- I used chives, tarragon, and basil)
1 tablespoon scallions (chopped)
1 tablespoon cheddar cheese (I’m using low fat)
1 teaspoon butter
1 cup fresh spinach
salt and pepper (to taste)
Instructions
Cook your oatmeal according to package directions.
Add in a pat of butter, sprinkle of cheese, whatever fresh herbs you have on hand and enjoy, and some salt and pepper. Give everything a good stir and set aside.
Fry your egg to desired doneness
Lay some spinach in a bowl, pour your savory oats on top and lay your egg smack dab in the middle of that creamy, cheesy, herby pool of goodness…
