I’m so NOT a morning person, but could become one if it meant waking up to this delicious bowl of savory oats every morning!
Fun fact: I can count how many times I’ve had oatmeal on one hand.
Even more of a fun fact: This is the only way I actually enjoy oatmeal. 🙂
I’m not really a breakfast person. It’s something I’ve struggled with my whole life. All you hear is how it’s the most important meal of the day and it’s part of a balanced diet and something you need in order to maintain a healthy weight. Then I started running and realized I needed to eat breakfast. It was fuel and I could tell there was a huge difference in the way I felt if I skipped it.
Occasionally I’ll grab a bowl of cereal and a piece of fruit, or something else sweet like a piece of this cinnamon pancake cake, but for the most part I’m a savory gal when it comes to breakfast or any meal for that matter. That’s why I fell hard for these fresh herb and cheesy savory oats! They’re creamy, filling, and the perfect pairing to a runny fried egg on top. Here’s how to make it…It could not be more simple to do!

- Prep Time: 3 minutes
- Cook Time: 3 minutes
- Total Time: 6 minutes
- Yield: 1 person 1x
Ingredients
- 1 package instant oatmeal (plain)
- 1 tablespoon fresh herbs (chopped- your choice- I used chives, tarragon, and basil)
- 1 tablespoon scallions (chopped)
- 1 tablespoon cheddar cheese (I’m using low fat)
- 1 teaspoon butter
- 1 cup fresh spinach
- salt and pepper (to taste)
Instructions
- Cook your oatmeal according to package directions.
- Add in a pat of butter, sprinkle of cheese, whatever fresh herbs you have on hand and enjoy, and some salt and pepper. Give everything a good stir and set aside.
- Fry your egg to desired doneness
- Lay some spinach in a bowl, pour your savory oats on top and lay your egg smack dab in the middle of that creamy, cheesy, herby pool of goodness…
- and done. 🙂
