Filet Mignon Wrapped Asparagus

Filet Wrapped Asparagus

  • 2 8 oz. filet mignons
  • 1 lb. fresh asparagus ((woody bottoms cut off))
  • 2 tablespoons butter
  • fresh chives
  • salt and pepper to taste

Horseradish Cream

  • 2 tablespoons sour cream
  • 2 tablespoons prepared horseradish
  • 1 clove garlic (minced)
  • 1 teaspoon fresh italian parsley (minced)
  • salt and pepper to taste

Instructions

  1. Let filet come to room temp and season very well on each side with salt and pepper. Preheat oven to 400.
  2. Steam Asparagus until the color becomes vibrant for about 3 minutes. You want them to remain somewhat firm. Season with salt and pepper. Set Aside.
  3. In a small bowl, combine sour cream, horseradish, parsley, garlic and salt and pepper. Mix well and set aside.
  4. Heat up a cast iron pan on high. Add in 2 tablespoons butter. Place filet in melted butter to sear on each side (about 2-3 minutes)

    Place cast iron pan in the oven for about 6-8 minutes. If your filet is thinner you will need to adjust the cook time. Just don’t overcook it.

  5. Remove the steaks from the pan, and place on a cutting board to rest for 10 minutes.

    Once rested, thinly slice and wrap it around 2-3 asparagus pieces. Secure it in place with a chive ribbon and put onto serving dish.

    Finish it off with a dollop of horseradish cream.

  6. Serve immediately or can sit out at room temp. Enjoy!
