Heat up a skillet on medium high and drizzle in oil.
Season chicken with salt and pepper on both sides and add into the pan to cook. Slice shallots and chop garlic.
When the chicken is browned on both sides, remove from the pan and lower heat. Add in the shallots and garlic to cook for a minute. Then add in a splash of chicken stock to deglaze the pan before adding in the cream and mustard. Stir everything together.
Add chicken back into the pan to finish cooking in the sauce. Serve with choice of side. Enjoy!
