Set a large cast iron pot on the stove and turn the heat to a medium high. Dice up bacon and render the fat. When bacon turns crispy, remove it from the pot with a slotted spoon and set aside (try not to eat it all… )
Add in your diced onions into the bacon grease, when they begin to soften add in the ground beef and break it apart as it cooks into small crumbles.
While that’s cooking, dice your potatoes into bite sized pieces. Add them into the pot when beef has browned.
Add in the can of diced tomatoes, beef stock, condiments, and seasonings. Cover and let cook for 30 minutes or so.
Remove the pot from the heat, and pour in the half and half, and add in one handful of cheese at a time, stirring in between so it melts into the soup, toss in the fresh spinach at the end to wilt, and serve immediately topped with those crispy bacon bits if you didn’t eat them all 🙂 Enjoy!
