Perfect Summer Potato Salad

Whether its a backyard BBQ or a church pot luck, this summer potato salad is the perfect side dish to bring!

  • 1 lb red potatoes
  • 5 hard boiled eggs chopped
  • 1/4 cup carrots shredded
  • 1/2 cup celery chopped
  • 1/4 cup red onion chopped
  • 1/2 cup sweet baby peas thawed from frozen
  • 3/4 cup mayo
  • 3 tablespoons Dijon Mustard
  • 3 tablespoons sweet relish
  • salt and pepper to taste


  • Cut and cook your potatoes in salted boiling water until fork tender. Then drain and set aside to cool.
  • Chop up the rest of your potato salad ingredients and add into a large bowl with the mayo, mustard, and relish. Give everything a good mix until completely combined.
  • Cover and refrigerate until time to serve.
