Garlic Chive Smashed Potatoes

can leave skin on for smashed or peel for mashed
half and half
salt and pepper to taste
Fill a large pot with water and place on stove. Add salt to the water. Cut potatoes into equal chunks and place in water.
Turn the stove on and allow potatoes to cook for 15 minutes.
Add in your chopped onion and garlic to the boiling water and cook for an additional 10 minutes.
Strain the potatoes and set aside. Put the pot back on the stove and lower the heat to low. Add in butter, cream, and sour cream. Mix until all melted together.
Add your potatoes back into the pot and smash everything together until desired texture. Season with additional salt and pepper to desired taste and mix in chives.
Serve hot. Enjoy!
